Crustless Crab Quiche


Makes 6 servings

Ingredients


2 teaspoons extra-virgin olive oil, divided

1 onion, chopped

1 red bell pepper, chopped

12 ounces mushrooms, wiped clean and sliced (about 4 ½ cups)

2 large eggs

2 large egg whites

1 ½ cups low-fat cottage cheese

½ cup low-fat plain yogurt

¼ cup all-purpose flour

¼ cup freshly grated Parmesan cheese

¼ teaspoon cayenne pepper

¼ teaspoon salt

¼ teaspoon freshly ground pepper

8 ounces cooked lump crabmeat (fresh or frozen and thawed), drained and picked over (about 1 cup)

½ cup grated sharp Cheddar cheese (2 ounces)

¼ cup chopped scallions

1. Preheat oven to 350°F. Coat a 10-inch pie pan or ceramic quiche dish with cooking spray.

2. Heat 1 teaspoon oil in large nonstick skillet over medium-high heat. Add onion and bell pepper; cook, stirring, until softened, about 5 minutes; transfer to a large bowl. Add the remaining 1 teaspoon oil to the skillet and heat over high heat. Add mushrooms and cook, stirring, until they have softened and most of their liquid has evaporated, 5 to 7 minutes. Add to the bowl with the onion mixture.

3. Place eggs, egg whites, cottage cheese, yogurt, flour, Parmesan, cayenne, salt and pepper in a food processor or blender; blend until smooth. Add to the vegetable mixture, along with crab, Cheddar and scallions; mix with a rubber spatula. Pour into the prepared baking dish.

4. Bake the quiche until a knife inserted in the center comes out clean, 40 to 50 minutes. Let stand for 5 minutes before serving.

9:13pm: WhooHoo!!
I got my birthday present early.  Target finally had a clearance sale on the patio furniture chairs that Manzabar and I liked. Manzabar will put up pictures of these chairs after assembly.

Last weekend was very busy with going to the largest farmer's market that I had ever been to. There were at least 150 vendors in a couple blocks radius in downtown Cedar Rapids.  Manzabar and I bought books.... No surprise there.
After the farmer's market, we then went on a long garage sale down a street that had at least 15 garage sales to 25 garage sales. This appears to be an annual event for the street. We did not buy much of anything.  Exception was a step ladder for $10.00 at our last stop. By this time, we were feeling the heat.  Whew!!!  Manzabar went and got the car while I waited with the ladder.
Then I took car of some very lovely cats for my friends both on Friday and Saturday :)
Now Sunday,  we had no excuse but to clear the gutters....Manzabar was a trooper about climbing the stepladder and getting on the roof of the garage.  I couldn't do that....VERTIGO

However, the weekend before Manzabar and I took a helicopter ride. Manzabar got vertigo while I was feeling exuberant.
Helicopter rides are the absolute best...

Tomorrow ,   Manzabar and I are going on a helicopter ride.  It's my first time flying...Mark is really excited about it himself.

Here's another recipe:

Beef Peach Pie

Ingredients

  • 1 pound ground beef
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup chopped onion
  • 1 cup soft bread crumbs
  • 1 teaspoon salt
  • 1 pinch pepper
  • 1 (15 ounce) can sliced peaches, drained
  • 1 tablespoon vinegar
  • 1 tablespoon ketchup
  • 1/4 cup brown sugar

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, mix together the ground beef, egg, milk, onion, bread crumbs, salt and pepper. Press into a 9 inch pie pan like a crust.
  3. Prick meat all over using a fork.
  4. Bake for 25 to 30 minutes in the preheated oven.
  5. Remove from the oven, and pour off any excess fat.
  6. Arrange the sliced peaches over the beef.
  7. Mix together the vinegar, ketchup and brown sugar, and spoon over the top of the peaches.
  8. Bake for an additional 20 minutes.
  9. Let stand for at least 10 minutes before serving.

3:10pm: WARNING!!!!! Chocolate
Manzabar loves waffles.  I like them but would rather have pancakes usually. This next recipe is a good waffle recipe that even I will eat more than one of.........

Chocolate Brunch Waffles

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1 cup NESTLE® TOLL HOUSE® Semi-Sweet Chocolate Morsels
  • 3/4 cup butter
  • 1 1/2 cups milk
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • Toppings (whipped cream, chocolate shavings, sifted powdered sugar, fresh fruit, ice cream)

Directions

  1. Combine flour, sugar, baking powder and salt in large bowl.
  2. Microwave morsels and butter in medium, microwave-safe bowl on HIGH (100 percent) power for 1 minute; stir.
  3. Microwave at additional 10- to 20-second intervals, stirring until smooth.
  4. Cool to room temperature. Stir in milk, eggs and vanilla extract.
  5. Add chocolate mixture to flour mixture; stir (batter will be thick).
  6. Cook in Belgian waffle maker* according to manufacturer’s directions. Serve warm with your choice of toppings.

The following tea recipe is really good cold but not with ice......Just ask Manzabar about that.  

Lemon Zinger Cider

Makes 4 servings
Ingredients

4 lemon zinger tea bags
4 cups boiling water
2 cups chilled apple cider or apple juice

Place tea bags in a heat-proof pitcher, add boiling water and let steep for 20 minutes. Remove the tea bags, add apple cider (or apple juice). Serve over ice.

I made this without the mango salsa but I think this actually needs it to counter the guiness that the recipe recommends using for beer.

Beer-Battered Tilapia with Mango Salsa


Makes 4 servings

Ingredients


3 tablespoons whole-wheat flour

2 tablespoons all-purpose flour

¼ teaspoon ground cumin

¼ teaspoon salt, or to taste

1/8-¼ teaspoon cayenne pepper

½ cup beer

1 pound tilapia fillets (about 3), cut in half lengthwise

4 teaspoons canola oil, divided

1. Combine whole-wheat flour, all-purpose flour, cumin, salt and cayenne in a medium bowl. Whisk in beer to create a batter.

2. Coat half the tilapia pieces in the batter. Heat 2 teaspoons oil in a large nonstick skillet over medium-high heat. Letting excess batter drip back into the bowl, add the fish to the pan; cook until crispy and golden, 2 to 4 minutes per side. Transfer to a plate and loosely cover with foil. Coat the remaining fish with batter and cook in the remaining 2 teaspoons oil; adjust heat as necessary for even browning. Serve immediately with Mango Salsa.

To cut a mango:


1. Slice both ends off the mango, revealing the long, slender seed inside. Set the fruit upright on a work surface and remove the skin with a sharp knife.

2. With the seed perpendicular to you, slice the fruit from both sides of the seed, yielding two large pieces.

3. Turn the seed parallel to you and slice the two smaller pieces of fruit from each side.

4. Cut the fruit into the desired shape.

10:08am: Indian-spiced braised chicken
This recipe is a favorite of Mark's and mine that I got from the Everyday Foods magazine.

Indian-spiced Braised Chicken
serves 4
Prep time 15 minutes
Total time is 4 hours and 15 minutes

Ingredients:
1 1/2 lbs of boneless, skinless chicken thighs ( I use white meat)
1 medium onion, halved and thinly sliced
1 can (14.5 oz) diced tomatoes drained
2 Tablespoons of tomato paste
1 Tablespoon grated ginger
2 minced garlic cloves
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper
course salt and ground pepper
1/2 cup plain yogurt (8 oz)
1/4 cup chopped fresh cilantro
1/2 teaspoon garam masala (optional)
cooked white rice for serving

1) In a 5- to 6-quart slow cooker, stir together chicken, onion, tomatoes, tomato paste, ginger, garlic, coriander and cayenne; season with salt and pepper.

2) Cook on high 4 hours (or on low 8 hours) until fork-tender. Stir in yogurt, cilantro, and if using, garam masala. Serve with rice.

Alternative Oven Method
Preheat oven to 350 degrees.  Follow step 1, using a 5-quart lidded heavy pot. Stir in 2 cups of water. Cover; bake until tender, about 2 hours. Stir in yogurt, cilantro, and if using garam masala.


This rated a 10 out of 10 with Mark.  If you can't take spiciness then lessen the cayene pepper.  

I plan to write in my log more often with recipes that I have found so I can share them with my friends :)  Also this recipe could cook all day at home while you are at work at a lower setting.

1:32pm: Did You Know
Getting MUMPS is still possible even if you've been vaccinated against it.
I figured that I was somewhat safe because I had an MMR shot.
However, I wsaw my doctor today and gave bloodwork exactly for that disease due to the swelling of my glands and the pain in that area.
The test results won't be back until next week.

Mark and I are both off work until next Monday. Although, technically we could go back to work on Saturday.

The direcor is really nice about me being sick but the lady who owns the place is a (PARDON THE EXPRESSION-DOG LOVERS) BITCH!

Well, so far I still have a job for now.

5:39pm: Hepatitis B shot
When I took my first aid and CPR class, I was told that my director had to pay for the Hepatitis B shots if I wanted them. Who wouldn't want to be protected?

Now, my director tells me that even though the person giving the class is full of bull and she doesn't have to pay for these shots.

Thus, I am now out of the money to get said shots. Reason being is that when I tried to contact the Red Cross to ask and check up on the law-was told that they couldn't be responsible to help me find it or help me find the class instructor!!

What a bunch of bullarchy!!!

I wanted the shots to protect myself from a very undesirable disease.

Anyone with ideas on where to go and see what I can do?

9:23am: Captain Jack
Captain Jack went to the vet for his dental checkup. Poor kitty. I was home sick so Mark who was feeling better got to take him in by himself.

Here's what Mark sent me to explain what all they did in the first e-mail:

When I dropped Jack off at the vet's office; I filled out the paperwork.
A normal dental treatment for a cat is $90. They then have several,
recommended options on that treatment: anesthesia, EKG and running his
blood work. I said to give the anesthesia and asked if he really needed
the other 2 since Jack was in so recently for a checkup. She said the
EKG & blood work check things that don't get checked at a checkup and
are really recommended whenever a pet is going under anesthesia. I told
her to go ahead and do them.

After the paperwork was all filled out; we went to get Jack out of the
pet carrier but he was not cooperating. I tried to pull him out but was
having trouble, so she picked up the carrier and tilted it to try
getting him out. He braced himself inside it so even when she had the
carried pointing straight down he wouldn't come out. Eventually she set
the carrier back down and was able to get him out of it. She then
weighed him (13.3 lbs) and I left for work.

I'd been here at work for a bit when I got a call from the vet's office.
The vet said he is likely going to have to extract some more of Jack's
teeth. He also said that one of Jack's kidney#s from the blood work was
high, so he wanted to give Jack an IV while he's under (at an extra
$65-70). I told him to go ahead and do it. I also asked if we need to
change anything in Jack's diet because of that kidney# and he said no,
it's just part of Jack being old. Lastly, I asked if there was anything
we could be doing to help Jack's teeth. He said we mostly need to bring
him in for frequently teeth cleanings. If we really wanted to try
something on our own, he said we could try brushing his teeth but most
cats don't like that


Later he e-mailed me with this information:

The vet just called. He's done with Jack, but he wants to keep him
until at least 3. He said Jack went through everything just fine, but
he removed 6 more teeth. There were 3 others that looked kind of
questionable to the vet, but he decided to leave them in for now. He
wants Jack on soft food for the next week to make sure that Jack's mouth
heals correctly. But says after that week is up Jack can go back to his
normal food.



My cat has only three teeth left in his mouth that will probably be extracted the next time he goes in. Poor kitty.

5:26pm: Life always seems to find ways to knowck you down on your butt literally.
Mark and I have been sick now for quite a little while.
Today was spent listening to country music at the doctor's office and hearing your husband grunting his displeasure.
We've had numerous arguments because we both have no sense of watching what we are saying to one another. No sense of humor in either one of us.

A job that keeps telling me to get back there!!! Get real people-if I could drive the freaking car without getting motion sickness-I would!!
Excuse me! Probably got it from there anyway. I just wanted to write it down.

We had a lot of real fun planned on Valentine's Day but got instead a doctor's visit, pills, and lots of sleep. HMMMM There was no time to shop or anything else for either one of us.

All I can say is If you are reading this honey, I LOVE you.

Someday, I will laugh my head off but not today. It hurts too much.
Maybe this will be something to tell our kids or nieces and nephews someday.

By the way, my cousin had a beautiful baby girl at 6 am this morning.

No need to reply to this. I needed to get it off my chest. I don't know why my first Valentine Day as a married couple mattered this much but apparently it did.

12:19pm: I feel really stressed out lately. I'm worrying too much and I think I reactivated my Depression.
Reasons why I think I reactivated it are simple:
Paranoia
Restlessness
Feeling hopeless
Feeling like a failure
Anger
Sleepy

The fact that I don't have a fulltime pernament job is really aggravating to me. I HATE looking for a job. IT SUCKS!!

Manzabar has made it clear that I need to find a job soon. aaaaaaaaaaaaaaaaaaaaaaaahhhhhhhhhhhhhhh. Doesn't help matters at all.

12:13pm: Well, I didn't get the preschool job. That was a bummer. But I have been applying to a lot of jobs on Corridor and Monster website. Hopefully, I get more interviews soon.

I'm at least getting some parttime work at the ARC. So at least some money is coming in

12:19pm: Tomorrow morning I get to check out a preschool and have an interview. It is at 7:30 in the morning. The preschool is in three different houses. This should be interesting!!!!

Manzabar got the coffee table refinished this last weekend. It looks great! Who knew that this really ugly yellowish green table could look so good. You can check it out at http://www.coffeebear.net/. This is what we spent our weekend together. On Monday, we got to eat some great food and enjoyed the company of our firends at Aweilkin's home.

Manzabar's mom will be moving next month (July) back to Michigan. She seems pretty excited and happy. But I know that manzabar will miss not having her nearby. We also need to move things out of her condo and into our apartment. We are getting some nice things for the apartment. I need to find room for them all.

The next couple of days will be myself getting the apartment ready for new furniture, getting a new driver's license, social security card, and more job applications from Iowa Workforce Center. Also working for the ARC in the meantime.

I actually need to look at my new cookbooks and find something new to try on Friday when our company comes to our home. :) I wonder what type of dessert I need to make as well.

3:25pm: Graduating
Well I am finally graduating this Saturday. Still not sure where my degree will take me.
I will say that having gotten married has made me a very calm person lately. Hmmmm.
It looks as though Manzabar's mom might be moving to Michigan. The realtor came in on Sunday with a client to look over her condo. That was shocking because we knew he was coming to look at the condo but not actually trying to sell it yet.
Manzabar is looking for a new job due to lack of any type of advancement. So, please pray that he might find something within his salary range and job skills.This new company changeover has been hard on him.
Otherwise my life is pretty boring...SORRY.

8:23am: Hello all
Mark and I finally got married after dating for 10 years. It had been decided a few years ago that Mark and I would both get married after we both were out of school. This year, I am graduating on the 21st of this month. Our 10 year dating anniversary was on a Saturday like our first date so myself being a romantic talked to my hubby and got married. Mark was finally ready to get married too. It would also be easy for someone to remember the wedding date too.
Mark looked so handsome in his scottish outfit. The wedding was short and simple with a small reception following. It was great!!!

My honeynight was beautiful!! We got to stay at Fulton's Landing in Davenport for the night. It was so romantic to watch the sun set, the river, and all the night lights reflecting on the water. Breakfast the next morning was so very yummy!! We had stuffed honey pancakes. The house was simply gorgeous with all kinds of antiques. Unfortunately, we had to return on Sunday because I still had school. We plan to later go on a real honeymoon sometime. Perhaps in a yearor so when expenses look better.

I have been remiss about writing in my journal. I am 30 days and 2 hours from my wedding day. I thought I was so smart having all the major things decided last August. That was great!! Let me tell you it is the small things that ruin some of the wedding feeling. I'm to the point that if something is brought to my attention-I say oh okay or great. It isn't that I don't care but some of these small things are a real pain in the butt. I mean they are small details that no one would care about unless you are BRidezilla. Sorry about my griping but I've had lots of griping about where or where not Mark and I registered. I hope I am done registering to make everyone happy. There are just so many things that one can pick for a registry. Getting married on our 10 year anniversary of our first date.
Other news is that I am also graduation in 44 days and 2 hours. Yes, I realize it is two weeks after getting married. I am a glutton for punishment and romantic things. School right now sucks. I am doing things that take 4 hours or more to complete and they are worth diddly squat. Enough points to hurt but not what it is worth time wise.
I just needed to let off steam and I was cranky. I promise to love up my cat and relax.......What a nice word-RELAX.....

5:14pm: Captain Jack
Captain Jack had 4 teeth pulled on Monday.. Poor cat! :) Jack of course, is on oral antibiotics; which is a big pain. Since, he is my kitty; I give him his meds. That is not fun!! He is a very good kitty but even he doesn't like his medication. So, lately Captain Jack has been hiding under the couch. I kind of miss not having my lap cat. :(
Mark has been trying to play the wooden sax that I got at a Ren Faire. Oh, my. Enough about that. "Ouch", says Jack cowering under the couch from a strange shrieky noise.
I finally have most of my wedding plans done. I found a photographer who charges $100/hour. My bridesmaid dresses have been ordered. Whew!! Sunday, we start counseling with the pastor. If I don't kill Mark for playing the sax. Just kidding....I love you Mark.

10:25pm: We ended up taking our cat to the vet today. He had a drippy nose this morning and his scabs were coming off. Poor kitty!!
He's going to be on antibiotics for a little while. Hopefully, it won't be too much of an ordeal.

His teeth are scheduled to come out on January 17th. His teeth are in pretty bad shape on one side. Explains the really bad kitty breath. The vet said that removing them is the only option because they are too far gone.

Manzabar has been a real trooper taking him to the vet with me and paying the vet charges. Manzabar you are our HERO.

The kitty does seem to be feeling better this evening. Thank goodness. I haven't seen him sneeze or wheeze for a while. I was kind of worried. I was hoping my cat didn't get broncitis. He does have an infection though (respiratory).

I am currently looking for parttime employment for this spring. I hope to find a decent paying salary for part-time work. Wish me luck.
